UTILIZACION DE LA CASCARA DE HUEVO EN LA PRODUCCION DE LACTULOSA (CARBOHIDRATO PREBIOTICO)

La cáscara de huevo en polvo y los permeados de quesería pueden emplearse como materias primas adecuadas en la producción de lactulosa (carbohidrato prebiótico), la cual puede ser utilizada como ingrediente en alimentos, proporcionando una vía alternativa para el uso racional de estos residuos de la industria alimentaria
