Se detectó la formación de hidrocarburos monoaromáticos y poliaromáticos y de aldehídos oxigenados alfa,beta-insaturados genotóxicos y citotóxicos

GENERACION DE COMPUESTOS TOXICOS DURANTE EL ALMACENAJE DE ACEITE DE GIRASOL

Se estudió la fase gaseosa de 27 muestras de aceite de girasol que habían sido almacenadas a temperatura ambiente en recipientes cerrados durante períodos de hasta 10 años. Entre los compuestos volátiles detectados, además de los típicos compuestos secundarios de la oxidación, también se observó la formación de dos grupos de compuestos tóxicos: hidrocarburos monoaromáticos y poliaromáticos y aldehídos oxigenados alfa,beta-insaturados.
