El trabajo analiza ciertas respuestas al daño por corte en hortalizas mínimamente procesadas

ACTIVIDAD RESPIRATORIA Y COMPUESTOS FENOLICOS EN APIO PRECORTADO

Los contenidos de las flavonas detectadas en apio precortado, apigenina y luteolina, aumentaron entre las 2 y 6 horas luego del procesado, dependiendo de la temperatura de conservación. Sin embargo, los valores medidos luego de 24 horas del corte fueron comparables o ligeramente superiores a los niveles de partida.
